We all need our vegetables. I love vegetable salads at potlucks, but I confess to rarely making them at home, probably because it would take forever to finish it. I know, the directions look a bit overwhelming but once into it, it's not bad. If you are one who takes a quick glance and decides it's way more trouble than it looks, I get that.
