I made this on a weekend, when I have more time to fuss with breakfast. This goes together quickly, and I found not as heavy as regular pancakes, which I really like. I found it surprising that the apples are put in the bottom, but when baked, they come out on the top. It's very flavorful and a keeper. INGREDIENTS: 6 eggs ½ tsp salt 1 ½ c. milk ¼ tsp cinnamon 1 tsp vanilla extract 2 Tbsp butter 1 c. all purpose flour 2 apples-peeled, cored, and sliced 3 Tbsp sugar 3 Tbsp...
Ten Years Ago-October 9. 2008 Photo caption: Something strange-Halloween-like-is going on at Bill Fisher's place at 416 Willard. Fisher and his daughter, Nikki, have a "papple" tree growing. It's a special kind of tree that grows both apples and pumpkins, as well, is just one of those "Waitsburg. One of a Kind" kind of things. The second annual "Holy Bucket Retreat" is scheduled for Saturday, Oct 25 at the First Presbyterian Church of Waitsburg. People from all over the valley are welcomed,...

I thought I'd give you a break from all the sweet recipes, although I made Greek Yogurt Chocolate Zucchini Bread this weekend and it was great. Made with coconut oil, honey, and not much brown sugar. Very chocolatey and not too sweet. I'm going to try to switch to apple and pumpkin recipes so if you think you would like this recipe, let me know. I have this turkey meatloaf mixed and ready for the oven-see report. INGREDIENTS: 2 c. coarsely chopped zucchini 1 egg 1 ½ c. coarsely chopped...
Ten Years Ago-October 2, 2008 Tomfoolery by Tom Baker: News of the week that kept the talking heads on TV buzzing was the possible melt-down of the economy. With the stock market taking a couple of "down" days in the 500-point range, and a 777-point plunge on the day that Congress was meeting to solve the problems of the economy, it had some of the historians comparing it to the 1929 market crash. You will find about as many folks willing to discuss the roots of the "adjustment" as there are com...

Weller Public Library 212 Main Street, Waitsburg Hours: Mon. and Thurs. 10 a.m. – 6 pm Storytime: M, 10:30 a.m. “Sold on a Monday” by Kristina McMorris—The sign is a last resort. It sits on a farmhouse porch in 1931, but could be found anywhere in an era of breadlines, bank runs and broken dreams. It could have been written by any mother facing impossible choices. For struggling reporter Ellis Reed, the gut-wrenching scene evokes memories of his family’s dark past. He snaps a photograph of the children, not meant for publication. But when it l...
I received this recipe from Heather Hiebert, one of the now-retired owners of the well-known Patit Creek Restaurant. In conversation she mentioned she had this great zucchini bread recipe. I asked her to please share it with us. This recipe calls for cake flour. I don't usually buy it unless I know I am going to use all of it. I have shared the substitution and have used it as well with success. Here it is again: Take one cup of all-purpose flour, spooned and leveled. Remove two tablespoons,...

You know what a Whoopie Pie is, don't you? I thought everyone knew, but I thought everyone knew what a Pecan Sandie was also. I was wrong. Here is what the web said: "The whoopie pie is a U.S. baked product that may be considered either a cookie, pie or cake. It is made of two round mound-shaped pieces of chocolate cake, or sometimes pumpkin or gingerbread cake, with a sweet, creamy filling or frosting sandwiched between them" I received a recipe in my email, using Red Velvet cake mix, with the filling being marshmallow crème. There was a...
Ten Years Ago-September 18, 2008 It is the quintessential American story, told and retold in thousands of towns and villages across the country of covered wagons, sturdy pioneers, immigrants from over the sea, financial hardships, moving, settling down, raising families. Yet with each retelling with different faces and facts, locations and circumstances, and points –in- time, come, like an heirloom family quilt, new textures to the fabric of the American Saga. Jack and Laurette McCaw are the m...

Original recipe from The Times and Bette Chase The thought of apple butter warms my heart. I always try to buy it homemade, usually at bake sales or yard sales, which I did for my last jar AND it was from Anita Baker's or her friend's yard sale. Then I asked her for the recipe. Seriously, I had no idea of how it was made, or cared, as long as I was able to resource it. This is a quote from CrazyforCrust.com: "Apple butter is a highly concentrated form of applesauce; it's cooked slow and long so...
Ten Years Ago-September11, 2018 Why a person would undertake the training, discipline, and dedication to enter a race which will take over 16 hours to complete and involving a 2.4 mile swim, bicycling 112 miles, and running a full marathon of 26.2 miles, is a question Waitsburg High grad Tammy (Otterson) Wood and her husband, Scott, get asked regularly. Scott and Tammy have been doing triathlons about 10 years. Among triathletes, the ultimate is to do an ironman, she said. “It’s a goal that takes a few years to arrive at." Over 45,000 mar...

I found this recipe in the Costco Connection and I liked that it used apple and cucumber. Remember the chicken poppy seed salad? It seems several chicken recipes have nuts and fruit. That one had pecans and grapes. I didn't make this one yet but will later. For me, this will be used as a salad. A few notes on cashews: Cashews are packed with antioxidants, vitamins E. K. and B6, and minerals such as copper, phosphorus, zinc, magnesium and iron. Many of these can be hard to find in other foods....
