Chocolate Bird's Nest Cookies

Here is something fun to make and can include the help of kids. Perhaps get some pretty pastel or Easter plates and gift them (with maybe a colored Easter bunny?)

Another simple idea, and I usually do it at Easter, is to make 2 round cakes. One round cake is for the bunny face, the other has two simple cuts to make the ears, and tie for the bunny. Kids love to decorate it with colored frosting or colored coconut, add eyes and nose. Like the chocolate bunnies, the ears usually get eaten first.

INGREDIENTS:

2 c. white sugar

1/3 c. cocoa powder

½ c. milk

¼ c. butter

½ c. peanut butter

1 tsp vanilla

3 c. oats (rolled or quick)

60 chocolate eggs

DIRECTIONS:

Combine the sugar, cocoa powder, milk and butter in a sauce pan over medium high heat.

Bring to a boil, boiling for one minute—Make sure it boils or one minute or the cookies won’t set up.

Remove from heat and add the peanut butter and vanilla until completely combined.

Stir in oats.

Scoop the cookies onto parchment or wax paper. Immediately press 2 or 3 eggs into the center of each cookie. Cool completely before serving

MY NOTES:

They suggested Cadbury eggs, or even pastel malt balls for the topping. If I were making them, I’d use the back of a spoon for an indentation and round the edges for more of a nest look. One could even add green colored coconut. Some similar recipes do add coconut to the mix.
