The first vintage of Cymbal was in 2018, and it has quickly become a tasting room favorite. The 2021 was sourced from Gamache, Boushey, and Bacchus vineyards – a terrific trio. It's an ideal summer wine, immaculately fresh and loaded with zesty flavors of grapefruit, white peach, and lemongrass, brushing against the edges of more tropical fruits. Fermented in a mix of cement egg and stainless-steel drums, it was finished briefly in French oak barrels, one-fifth new.
