I recently ordered Espresso Powder from King Arthur Flour Company. I "liked" them on Facebook so I can see their posts. They had posted that coffee or espresso used in chocolate recipes enhances the chocolate flavor. I remembered I had a chocolate cake recipe that called for a cup of hot coffee and thought I could try this espresso powder. And as luck would have it, no one signed up for coffee hour at our church. I usually don't make cake at home because it's too much to eat for the two of us....

I think I found this on Facebook. I love that you can save recipes and ideas and go back to them when you get a chance. Not that I have, but they are there in case and Facebook reminds me how many I saved that week. Quote: “This is perfect for any potluck. This salad packs a lot of flavor and is very hearty. You will get rave reviews with this one” I didn’t make this yet but will next week. I went to the store and didn’t find the white wine vinegar. I googled it and “they” said no, it is not the same as white vinegar. I’ll see if I can find it...

Before I mention this week's recipe, I'd like to talk about last week's recipe that used a raw egg. It is not recommended to eat a raw egg, so please look up the pros and cons and decide if you want to use the recipe. My friend suggested substituting Egg Beaters. As she and I discussed, I have not had a problem eating raw cookie dough or batters with a raw egg, so I would not have thought anything about making the peanut butter pie. She has had experience with salmonella and food poisoning and it sounds like it is not a fun thing to go through....

This week’s recipe comes from Cheri, who is the owner of The Last Resort. She asked me if she could share some of her recipes. Absolutely! Those tried-and-true recipes are the best. I have seen peanut butter pie recipes before, but have not made them. This is on my list now. I asked her to take a picture, but she said it was gone before she had a chance. Joe will tell you that I would put peanut butter on everything. Not true. It has its place, but I have more places to put it than he does – like pancakes. INGREDIENTS: 1 1/3 c. creamy pea...

I thought I had shared this before, but I don't see it in my recipe file. I love strawberry and rhubarb anything. I will reproduce the original recipe here, and later tell you what I did differently. INGREDIENTS: 4 c. fresh rhubarb-1 inch diced (4-5 stalks) 4 c. fresh strawberries, hulled and halved 1 ¼ c. granulated sugar 1 ½ tsp grated orange zest 1 Tbsp cornstarch ½ c. freshly squeezed orange juice 1 c. flour ½ c. light brown sugar, lightly packed ½ tsp salt 1 c. quick-cooking (not instant) oatmeal 12 Tbsp...

Are you still waiting for the Perfect Pound Cake recipe? Me too! I’m sure I put it somewhere I could find it when I wanted it, but... Yes, I could google it, but there is more than one and I wanted to try this one. So it is on the back burner until I clean my desk or accidently find it. This recipe came from a friend. I have tried it and it’s good. It is almost barbeque season and this would be perfect for it, or a small gathering. I don’t know how well it would hold over though. INGREDIENTS 1 bag spinach 1 head iceberg or romaine lettu...

I really struggled with the recipe this week, thinking of Mother's Day. I actually over-thought it. First I was thinking of a recipe for brunch, but selfishly, brunch for me comes at the wrong time of day. I'm hungry when I get up, thus not hungry for brunch. Then I thought of the many different types of moms: those who are with us and those who are not. And those people in our lives that may be more motherly and nurturing than our own moms, like aunts, older sisters, elderly next door...

Are you asking yourself, what happened to the perfect pound cake recipe I was talking about last week? I spent at least a half hour looking for it on Saturday and couldn't find it. I think I pulled it out of my drawer so I would have it when I was ready for it, so it is somewhere. So frustrating; but that seems to be how I roll. I saw this recipe and it caught my eye because of the smoked paprika. We have some, but I've never used it. It seemed like a lot of paprika, but the reviews all said it...

I wasn’t sure which recipe I was going to use this week. I have a recipe that is called, The Perfect Pound Cake. It takes lots of butter and eggs so I wanted to try it first before I suggested someone else try it. I still have a tub of Klicker’s strawberries frozen and frozen blueberries. I want to make the pound cake and put the fruit on top. That, hopefully, will be next week’s recipe. I went searching through a recipe box that a friend shared with me. I found this one and thought it would be perfect for tomorrow’s dinner. I have leftove...

I hadn’t thought about granola for a very long time, until my daughter-in-law mentioned she had it and how good it was. I asked her to share the recipe, and I had remembered I had seen my old granola recipe not too long ago. I must have been about her age when I started making it. There are many variations you can make, according to your taste. I will share her recipe and the one I have had for 40 years. They change only in the amounts of oil and sugar—well, I guess in the other ingredients also. Granola - from Alma 5 cups oats ½ c. grou...

I was needing to make something for the church coffee hour. This recipe came to my email, via All Recipes. I have had it before and remembered I liked it, and thought this would kill two birds with one stone. It would be my vegetable recipe also. It's probably not one that you would make at home to eat, as it fills a baking sheet. The recipe says 9 x 13, but my baking sheet was a 10 x 13 and it still could have been a bit bigger. It would make a nice recipe for a gathering or luncheon. One...

This week's recipe is cinnamon bread, because it came into my email and I can't resist fresh bread. In case you are wondering, the "1" added to the name probably means it is one of many. I wish I was drawn to entrees or salad recipes, but, no, it's desserts and breads. I made a cinnamon coffee cake last week. I remembered, then, I didn't care for it the first time so I threw the recipe away, in case my memory was short again. This one is a keeper, light but not too sweet. I am still eating on...

There is a story behind this recipe that is more of a “here is what you start with” recipe. My friend, we shall call him Fred, and his wife, we will call her Shirley, shared this over conversation. For reasons we won’t get into, their real names can’t be used in the newspaper. Fred was eating lunch one day, and after a comment from me, told me what was in his lunch (that he could remember). In the conversation, he told me Shirley roasted the beans, except for the kidney beans. That had me intrigued, as I had not heard of roasting garbanz...

I mentioned I would share the chicken enchiladas recipe this week, though I confess I did not make it. It came from All Recipes, with a 4.5 star and commented that it was an easy and quick dinner. I received the nicest phone call from a lady who told me she really likes the Frittata recipe, and shared that she added Italian seasoning (a tablespoon if I remember correctly). What a great feedback. I don't think I would have thought to add that seasoning, but next time I will. Also, for those who have stopped me and told me they have enjoyed...

I apologize. I said this week would be chicken enchiladas, but having recently been through and over the flu, I couldn’t quite think about them, so I chose a carb. I found this recipe in a carpet cleaning pamphlet. [Huh? – Ed.] I had all the ingredients---except whole wheat flour and buttermilk. I purchased a couple of cups of whole wheat flour from one of the bulk bin stores, and canned powdered buttermilk that I usually have on hand. Buttermilk is rarely thought of except in baking (in my household). I’ll give you an easy substitution that...

Good ole banana bread: often thought of when you see those ripe bananas starting to go to waste. This recipe, shared from by friend, Lara, was served at our church coffee hour. As you can see, its where I can taste test it before I share it. I have not had banana bread with sour cream, mostly because I don’t care for sour cream, but it added moisture and complimented the flavor. For me, I’m always thinking of ways and reasons to share food, so banana bread is perfect for my neighbor who kept my sidewalks clear of snow. INGREDIENTS ½ C. butt...

I chose this recipe for this week because I have been lacking in vegetable dishes. I mentioned before that my vegetables are mostly eaten plain. This was served at our church coffee hour and was a hit. One other person served something similar, but with brown rice added. It was served with tortilla chips, but I think it could be served as a side dish. Ingredients: 1/2 onion, chopped 1 green bell pepper, chopped 1 bunch green onions, chopped 2 jalapeno peppers, chopped 1 tablespoon minced garlic 1 pint cherry tomatoes, quartered 1 (8 ounce)...

As promised, here is a recipe for Red Velvet Cake. I didn't make it, as I didn't want to have a whole cake around to eat. But I did make one many years ago, when they were the rage. While reading this recipe, I noticed it calls for white vinegar and soda. That combination usually makes a recipe light. And the frosting calls for cooking the flour and milk first. Interesting. So if you make it, please let me know. If you don't want to have to eat a whole cake, think about how nice it would be to share a slice or two with someone who could use a...

This was served at our church potluck luncheon. Potlucks are a great place to try new recipes, and also to take a favorite one to share. I have a similar recipe, called “Overnight Salad,” that doesn’t use the pasta or ham, but adds cabbage. This makes a nice size salad and would be great as a meal in the summer, or for lunch with some homemade bread. It can be made the night before, which is handy if you are having guests. The picture, if I can copy it off well enough from the printed recipe, shows it in a trifle bowl, so that you can see the d...

"Cabbage leaves stuffed with ground beef, onion, and rice, covered in a sweet and tangy tomato sauce and cooked in a slow cooker." Ingredients: 12 leaves cabbage 1 cup cooked white rice 1 egg, beaten 1/4 cup milk 1/4 cup minced onion 1 pound extra-lean ground beef 1 1/4 teaspoons salt 1 1/4 teaspoons ground black pepper 1 (8 ounce) can tomato sauce 1 tablespoon brown sugar 1 tablespoon lemon juice 1 teaspoon Worcestershire sauce Directions: Bring a large pot of water to a boil. I’ll bet dimes to dollars many of you quickly looked at the ingredients to make sure it wasn’t lasagna noodles and Hershey syrup. This dessert is, in my opinion, not sickening sweet, but it is very flavorful. A friend called it decadent, but you can’t go wrong with Oreos and chocolate pudding. 1 pkg. regular Oreo cookies, (not the Double Stuff) about 36 cookies 6 Tbsp. butter, melted 1-8 oz. pkg. cream cheese, melted ¼ c. granulated sugar 2 Tbsp. cold milk 1-12 oz. (large) Cool Whip, divided 2-3.9 oz. pkgs. Chocolate Instant Pudding 3 ¼ c. c...

Here you go. A great way to clean out all the yummy stuff from the holidays and get the body back into healthy foods. I say that before I share my recipe for chocolate lasagna next week. Makes you kinda shudder, huh, but it’s good, I promise. This salad was served to me when we were invited to a friend’s house for Christmas. It was flavorful and colorful. I don’t eat a lot of kale (understatement), but when I have, it tends to be bitter. I didn’t notice it at all in this recipe, maybe because the apple and raisins gave it a slight sweet taste,...

Scalloped potatoes sound boring, but it’s great comfort food. I haven’t met anyone that doesn’t like the dish—but I’m sure they are out there somewhere. This is the recipe I have used many times, and always with compliments. It is thew basic cream sauce over potatoes, but I think the difference must be the thyme and parsley. I have often made it without the ham, as some of my family does not eat pork, and it does not take away the flavor. If one wanted to, one could use turkey ham. Less calories and tastes a lot the same. Ingredien...

Be aware: This is addictive! It has the texture of a butterfinger bar. Sometimes bazaars will sell “soft peanut brittle” for a huge price or candy stores will, and you think to yourself, I wish I could make it myself. Well here is the recipe, or perhaps one of them. I believe people are getting away from making candy, maybe for weight reasons, maybe not enough family around, or just have never attempted it. This recipe needs some helpful hints before you try it for the first time. Nothing like someone else making the mistakes so you don’t have...

Sorry, but this doesn’t have a title. Melissa, who works at the Blue Mountain Station, made this squash in two very large pans for the Thanksgiving dinner that was served at our church. I asked her if I could have the recipe and she grabbed a few small pieces of paper and wrote it down. I recently asked if the recipe would make enough to fill those large pans and she said she cut it down to make a 9 x 13 inch pan. It was delicious and I think a perfect vegetable dish if you are having a holiday dinner, either with turkey or ham, if you like s...
