Lola Burch Beckley Speratos died on November 19th, 2016 at the age of 94. She was born May 13th, 1922 in Waitsburg, WA to Clarence and Anna Danielson Burch. Clarence was a janitor for many years in the Waitsburg school system where Anna was a teacher. Lola graduated from Waitsburg High in 1940 and soon after married Royce Beckley and had two children Russell and Louise. Lola was preceded in passing by her husband Royce and her son Russell. Sorry, but this doesn’t have a title. Melissa, who works at the Blue Mountain Station, made this squash in two very large pans for the Thanksgiving dinner that was served at our church. My rotation for recipes is desserts, breads, entrees, and vegetables/fruits. The first two come easily, the last two I always have to dig up or think about.
