Cranberry Orange Sauced Sweet Potatoes

I put this in last year about this time. At the time I had not made it, but it is very good!! Wes L. my friend who is always encouraging, said even the kids liked this when they made it for Thanksgiving.

So this is a repost of last year’s recipe.

Does your Thanksgiving always include sweet potatoes? Is it the recipe with the marshmallows on top?

This sounds really good. I read the reviews and I’m glad I did. It was given a 5 star rating which is as good as it gets.

First, the recipe says to bake the sweet potatoes and split them like a baked potato, then put the sauce on it. Most of the reviews said they cut them into cubes, baked them, then added the sauce.

Second, the recipe called for a ¼ cup of Crisco. Most if not all said they used butter.

Happy Thanksgiving to all. I am thankful for those who have given me their feedback and how they changed the recipe to their liking, those who have taken the time to let me know of a typo, those who like to read them but haven’t tried any, and those who have sent in recipes to share.

INGREDIENTS:

6 medium sweet potatoes or yams

¼ c. Crisco All-Vegetable Shortening or oil (see note above)

¼ c. packed brown sugar

½ tsp salt

¼ c. fresh orange juice

¼ c. water

1 ¼ c. fresh cranberries, rinsed

½ tsp cornstarch, mixed with 2 Tbsp cold water

DIRECTIONS:

Heat oven to 400 degrees.

Wash sweet potatoes, pat dry. Prick with a fork, place in a shallow baking dish. Bake 40 to 50 minutes or until soft. During the last 10 minutes of baking, prepare sauce (see note).

Melt shortening or butter in medium saucepan. Add brown sugar, salt, orange juice and water, stirring over low heat until sugar dissolves. Add cranberries, bring to a boil. Reduce heat, simmer, covered 1 to 2 minutes or until cranberries start to pop.

Stir cornstarch mixture into cranberries and cook, stirring constantly, until sauce comes to a boil. Reduce heat and cook 1 to 3 minutes or until mixture is slightly thickened.

Make a lengthwise cut in the center of each potato, press open from bottom. Place sweet potato on serving platter. Top each with cranberry sauce. (See note above.)
