M&M Monster Cookies

I am using this recipe this week in honor of someone who passed away, Rosemary Newman. This recipe was handed out at the gathering after the funeral. It touched me because I have kept and used recipes that were passed on from family members who are no longer here. I think it is a compliment to have someone remembered for what they used to make, the tradition of the favorite food you could count on when you visited. When my boys' great grandmother was in her last days, she asked me what I would like to have, that she could give me. I said her recipes and cookbooks. After her funeral, there was a stack of recipes and cookbooks that had my name on it. When people who spoke about her at her funeral, all mentioned her bread pudding, which could consist of just about anything, but nothing went to waste. Old bread, cookies, donuts all went into this bread pudding. I now hear my boys say, "when you come to visit, will you make...," and it warms my heart. It's usually Almond Roca, fresh rolls, nuts and bolts, among a few.


INGREDIENTS:

½ of 1 cube of margarine/butter

½ Tbsp vanilla

¾ c. peanut butter

1 Tbsp baking soda

2/3 c. brown sugar (less 1 Tbsp) 2 eggs

½ c. sugar

½ to 1 c. M&Ms

½ c. to 1 cup chocolate chips

½ Tbsp corn syrup

2 c. Quick Oats

DIRECTIONS:

Preheat oven to 350 degrees

Cream butter with peanut butter, add remaining ingredients in order given, blending well after each addition. Bake at 8 to 10 minutes or until lightly brown. Let stand a few minutes on cookie sheet before moving to wire rack.


I am smiling  first, because of tabs. The ingredients are not in the order she wrote them and the original recipe has writing off to the side. Second, I love the simplicity of the directions. Most of us in the older generation know the steps one takes to put the recipe together; however I've been known to think I know and forget an ingredient.

For me, this recipe doesn't seem to need a lot of butter, but maybe the peanut butter makes up for the oils usually needed. And for sure, if I have a choice of ½ cup or 1 full cup of M & Ms and chocolate chips, you know which one I will choose.
