Cheesy Bundt Bread

I’m making this bread for dinner tonight to go along with the Salmon Mango Bango. I’ll let you know how it tastes and if it’s worth trying. I guess if it’s not, then I’ll have to find another recipe. It would be silly to post a recipe and then say don’t try it, so if you are reading this, then it was a keeper.

INGREDIENTS:

3 c. flour

½ c. unsalted butter, melted

1 c. sharp cheddar cheese, grated 1 tsp baking soda

1 c. parmesan cheese, grated 1Tbsp baking powder

2 large eggs 1 tsp salt

¾ c. sour cream ½ tsp garlic powder

¾ c. plain Greek yogurt ½ tsp onion powder

DIRECTIONS:

Preheat oven to 350 degrees. Spray a bundt pan with non-stick cooking spray and spread evenly around pan with a paper towel.

Mix flour, baking soda, baking powder, salt, garlic powder, and onion powder in a large bowl until combined.


Whisk together eggs, sour cream, and Greek yogurt. Pour mixture into dry ingredients. Add melted butter and stir to combine.

Mix cheddar cheese and parmesan cheese into mixture. Pour batter into bundt pan, spreading evenly to edges.

Bake for 50-55 minutes, until inserted toothpick comes out clean. Remove from oven. Cool 10 minutes before slicing.

MY NOTES:

Geez, while I am typing the recipe, I realize it called or a tablespoon of baking powder instead of a teaspoon. It did rise nicely, so I’ll see if it fits the description of a “light” bread. I didn’t have a block of Cheddar cheese so I took some sharp Cheddar cheese in slices and chopped them into little pieces. I didn’t have onion powder so I used freeze dried shallots and chopped them. And lastly, I used about a half teaspoon of salt and quarter teaspoon garlic salt instead of the requested teaspoon of salt.


It said to pour into the pan. I had to spoon it as it was a thick dough. I was a little short on the Greek yogurt, but that shouldn’t have mattered. But then, what I bought was similar to Greek yogurt and a small container, since I don’t eat yogurt.

I tried it!! I had to know. It is good, even with the goofs. Serve with spaghetti, a salad, or a dinner that may need a little extra something.
